The Verandah
Located by the pool, this airy Asian inspired restaurant
offers a small selection of mainly American wines by the glass. The wine list
itself is also not too big and has a nice selection of choices from around the
world, dominated by California wines.
Steak by Charlie Palmer
Downstairs and next to Verandah, this exquisitely designed
dining room has a good size lounge in the front with good by the glass wine
selections for California, France and Italy. The wine list is quite well
appointed with many esoteric selections by Sommelier Luis de Santos; also older
vintages of great Bordeaux wines.

Bice
A very nicely decorated branch of the world famous
restaurant group with ample bar space and great looking dining area, located
right next to the “Harbor Area” in Desert Passage. Their wine list is quite
diverse, although not very deep and is particularly weak in selections from
France.
Commander’s Palace
A gorgeous recreation of the classic and famous restaurant
from New Orleans owned and operated by the Brennan family. Several different
rooms, all with their own charm and atmosphere. One room is entirely paneled
with wine racks. Sommelier Steve Hua has put together a good list that includes
top selections from California, Bordeaux and some Italian wines as well. Good
by the glass list.
Josef’s
Located right in the heart of Desert Passage in the
so-called “Lost City” with good patio space on the square and nicely decorated
dining room. Wine list is quite eclectic, but not very broad. Serious
California wines at high prices and some moderately priced interesting French
selections too.
Lombardi’s
Neighbor to Josef’s, also facing the square in the “Lost
City”. Good home style Italian restaurant with upper-end tendencies. Good
selection of wines from Italy on the list and reasonably priced wines by glass,
that can be sipped outside while people watching.
PF Chang’s China Bistro
Excellent modern décor and Strip version of the famous
chain. Food is always inexpensive and great and the wine list is quite well
appointed, even though it’s not too comprehensive. Very good selection of wines
by the glass with mostly Californian choices however.
London Club International
Sort of a Casino within another Casino Hotel. Very high-end
and exclusive looking “Club” atmosphere with several bars and a dining
facility. High prices throughout, but excellent service and good selection of
wines both by the glass and on their rather limited wine list.

Picasso
Located one level down just across from the entrance to the
North Valet. Perhaps the most astonishing restaurant in United States and home
to a veritable museum collection of originals by Picasso, as well as Chef
Julian Serrano. Their wine list is extensive and eclectic with many great
choices, some at remarkably moderate prices. Sommelier Robert Smith will ensure
you are taken well care of and the service and atmosphere is truly 5-star. Features
daily changing degustation and prix fixe menus with wine pairings for each
course. Superb experience.
Prime
Located right across from Picasso on the lower level and
shares a great terrace with it in the middle, where one can choose a glass of
wine from the good wine by the glass list. The dining room itself is a marvel
of interior decoration with light blue marble and brown subtle tones with
silver accents throughout. Sommelier John Burke is extremely attentive and runs
a great wine program with very good selections from most areas in the world.
Aqua
Located in the back of the beautiful Conservatory area just
off the main lobby. A sister restaurant to the famous one from San Francisco by
Michael Mina. Has a good wine program and selections by the glass with a weekly
changing degustation menu paired with wines. Lots of great choices for their
famous seafood dishes.
Jasmine
Fabulous Chinese restaurant, reminiscent of the best rooms
in Hong Kong, but this one has views of the lake with the fountains. Wine list
is rather limited, but very well put together from the Bellagio master list,
which is under the auspices of Jay James MS, the Wine Director and his right
hand man David Maffey.
Shintaro
Superb Japanese restaurant with one of the most stunning sushi
bars anywhere, featuring live man-o-wars in multi-colored aquariums behind the
bar. Wine list is again rather limited, but there are some choice selections
especially from Bordeaux available here.
Olives
Located in the shopping area on the northern side of the
hotel. A concept restaurant by Todd English from Boston with many of his
signature dishes on the menu. The wine list is quite limited but has good
prices and a decent selection of wines by the glass, which can easily be taken
in at their bustling bar.
Le Cirque
The Las Vegas branch of the venerable establishment from New
York, operated by the Maccioni family as well. Very formal atmosphere adds to
the experience with their eclectic wine list, which has great wines from France
and Italy, as well as pricey top California selections. Sommelier Frederick
Montandon has a Midas touch with wine and food pairings and there is also good
by the glass choices.
Osteria del Circo
The Italian version of Le Cirque, right next door. A
gorgeous dining experience in this wonderful restaurant, which is distinctly
Italian in flair. The wine list reflects that too, but with good selections of
wines from France, California and other countries. Sommelier Paolo Barbieri has
ensured that there is something for every taste on the well appointed wine
list, which also features some 20 selections by the glass.

Japengo
Very pretty and eclectic restaurant with fantastic desert
and lake views from almost every table. A pretty small wine list with very few
choices outside of California wines. Some selections by the glass, but again
mostly Californian wines with moderate prices.
